Homemade fresh pasta

It’s almost mandatory for a chef to know how to made fresh pasta at home. I finally did.

Ingredients:

  • all purpose flour, 1 cup
  • 1 whole egg

Whole Wheat Margherita

Don’t you know that pizza can be made at home. It’s easier than you think. Besides, you can make it a little healthier by using whole wheat flour instead of white flour. That is the beauty of home cooking.

Margherita was named after a queen. She was served this type of pizza when she visited a countryside. The color of Margherita also resembles the flag of Italy.

Ingredients:

  • White all-purpose flour, 1/2 cup
  • Whole wheat flour, 1/2 cup
  • Warm water, 1/3 cup
  • Yeast, 1 teaspoon
  • a pinch of suger and salt
  • a tablespoon of olive oil
  • Mozzarella cheese
  • Basil leaves, 1/2 cup
  • Tomato paste

Steps:

  1. combine white and whole wheat flour in a bowl, add water, yeast, sugar, salt and olive oil. Mix well and knead by hand for at  least ten minutes. Rest the dough at room temperature for half an hour.
  2. Roll the dough into big flat pizza crust. Add tomato paste, sliced mozzarella cheese and basil leaves. Add some salt and olive oil.
  3. Heat the pizza in the oven at 225 C for 10 miniutes or until cooked.

Pasta alla Arrabiata

I love the simplicity of Italian cuisines. The real Italian foods consist of few ingredients. The cooking is not complicated. They rely on the freshness and the quality of the raw materials themselves to deliver good taste.

Pasta alla Arrabiata is my favorite’s. Arrabiata means angry in Italian. So, you bet, hot chillies are the primary ingredient of this menu. The traditional recipe involves no meat, but I love to spice it up with some bacons. Also, you can go for whole-wheat penne if you want.

Ingredients:

  • Penne (or any other type of pasta)
  • some sliced bacons
  • chopped tomatos, 1 cup
  •  a few pieces of hot chillies
  • a glove of garlic, chopped
  • olive oil, 2 table spoons
  • grated parmesan cheese
  • salt and pepper

Steps:

  1. Bring salted water to boil. Add penne and cook until aldante. Remove from heat. Drain the cooked penne.
  2. Fry bacons on the pan and set aside. This step is optional.
  3. On the pan, medium heat, add olive oil and garlics, cook until golden brown. Add chopped tomato and continue cooking for a few minutes. Add salt and pepper. Add bacons if you have.
  4. Pour penne into the sauce. add parmesan cheese on top.

Italian Vinaigratte & Japanese Soy Sauce Dressing

I never bought salad dressings. I make it on my own. Italian Vinaigrette is my favorite. It is simple and delicious, not to mention healthy. Simple mix white vinegar and extra virgin olive oil at 1:3 ratio. Then add salt, pepper and any spice of your choice such as thymes. Shake well. You are ready to go.

If you feel like having Japanese food. You can make your own Japanese soy sauce dressings, too. Using the Italian vinaigrette made earlier, add soy sauce (1 portion), sesame oil (0.5 portion) and sesame seeds. You can also add mayo. That last ingredient is absolutely optional, though. It is that simple.

Penne with Pesto Sauce

Pesto is another Italian sauce that is so simple to prepare. In fact, I grow my own basil at home just for this menu. If it is hard to obtain pine nuts in your area, you can use peanuts or other kinds of nuts, too.

Ingredients:

  • Basil leaves, 1 cup
  • pine nuts, 1 table spoon
  • olive oil, one quater cup
  • grated parmesan cheese, one quater cup
  • Penne (or any other type of pasta)
  • a glove of garlic, chopped
  • olive oil, 2 table spoons
  • grated parmesan cheese
  • salt and pepper

Steps:

  1. Combine pine nuts, basil leaves, olive oil and parmesan cheese altogether in the blender. Grind them finely.
  2. Bring salted water to boil. Add penne and cook until aldante. Remove from heat. Drain the cooked penne.
  3. Add the pesto sauce from the first step into the penne. Mix well. Add salt and pepper to your liking.
