Minced Pork and Salted Olive with rice

This recipe was one of my favorites when I was a kid. It is a Thai-Chinese food because it was originated in Thailand by Chinese. Having eaten it again remind me of my childhood.

The salted olive can be bought in can from any asian supermarket.

Ingredients:

  • Minced Pork, 1 cup
  • Salted Olive, 1/2 cup
  • Minced Garlic, 3 tablespoons
  • Sugar, half teaspoons
  • Olive oil, 2 tablespoons
  • Chopped lime, red hot chillis and gingers

Steps:

  1. On medium heat, stir olive oil and minced garlic on a pan until golden brown.
  2. Add minced pork and continue to stir until cook.
  3. Add chopped salted olive and mix well. Continue to stir for a couple of minutes
  4. Serve with rice and chopped lime, red hot chillis and gingers. Ornate with coriander leaves on top (optional)

Chinese Cucumber Salad

I got this recipe from a Youtube Channel. It is one of the best resources on authentic Chinese food recipes ever found on the internet. It’s produced by an American-Chinese couple.

I just love to eat this recipe chilled.

Ingredients:

  • Cucumber
  • Chilli oil
  • Coriander
  • Lime juice
  • Sugar, Fish sauce

Simple Fried Rice (Chinese Style)

There are such a hugh variety of fried rice around the world. They are all great, depending on your preference. The one is a Chinese-style. I intended to demonstrate it because it is one of the most simple, consisting of few ingredients, yet full of cooking techniques.

The right Chinese style fried rice must be very dry. The way to achieve this is to fry the egg first and add rice later. This one is also good for vegans, because no meats involved.

Ingredients

  • Cooked rice, 1 cup
  • Green beans, 1/2 cup
  • an egg
  • olive oil, 2 tablespoons
  • 1 1/2 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • chopped spring onions

Steps

  1. Mix white and egg yolk and then fry them on the pan. Reduce heat.
  2. Raise to high heat. Add rice and stir fry vigorously to prevent overheating. Add green beans. Continue to stir. Add spring onions.
  3. Add soy sauce. Continue to stir for a while. Reduce heat. Add sesame oil.

Stir-fried Morning Glory (Thai)

I made this dish the Thai way, since I live in Thailand. The food has Chinese origin apparently, though. Thai people love to add a small amount of fish sauce. In Thailand, we love to eat it with plain boiled rice.

Ingredients:

  • Morning Glory, 1 bundle
  • Black bean paste, 1 tablespoon
  • Fish sauce, 1/2 tablespoon
  • Vegetable oil, 2 tablespoons
  • Red chilli, 2-3 pieces
  • Garlic, 2 gloves

Steps

  1. On a wok, put in vegetable oil on medium heat. Add garlic and stir until golden brown. Add red chilli.
  2. Put in morning glory, keep stirring, add bean paste and fish sauce. Raise the heat to high. Keep stirring for a minute or so.
  3. Serve with a bowl of plain boiled rice

Pickled Lettuce

Chinese people especially in the south eat plain boiled rice with some vegetables for dinner. My family also inherit this lifestyle for our chinese ancestors. I got to eat a lot of this menu when I was young.

Pickled lettuce can be bought in can from the supermarket. You simply have to spice it up with chilli and lime juice. Don’t forget to chill it before serving. It will be much tastier.

Ingredients:

  • Caned Pickled lettuce
  • Red chilli, chopped
  • Red onions, chopped
  • Fish sauce, 2 tablespoons
  • Lime juice, 2 tablespoons
  • Coriander leaves, for decoration
  • Some sugar
  • Boiled rice, 1 cup

Steps:

  1. Combine all ingredients, mix them well and chill them in the fridge
  2. Serve with boiled rice

Dan Dan Noodle

Dan Dan Mian was originated in China. It is one of the easiest noodle recipe to prepare at home, because it uses minced pork as the key protein. My own recipe is quite different from the convention. I like to eat it without soup.

You can buy chilli oil from supermarket, but you can also make it at home. It’s simple. Simply pour boiling oil into minced dried red hot chilli. You can add some herbs such as Chinese sichuan pepper along with some salt, but that is totally optional.

Ingredients:

  • Egg noodle
  • Minced pork
  • Ground peanuts
  • Chopped spring onions
  • minced garlics
  • vegetable oil
  • Chilli oil
  • Soy sauce
  • Sugar, MSG (optional)

Steps

  • Boil and drain minced pork. Seasoned with soy sauce and chilli oil.
  • Put vegetable oil on the pan at medium heat. Add chopped garlics and stir until golden brown.
  • Boil and drain egg noodle (about 45 sec)
  • Combine all ingredients together in a bowl
